Picarones– Peruvian Sweet Potato Donuts with 200 Years of Background

All about my favored Peruvian treat

Writer’s photo. Picarones.

Is sweet potato one of those ingredients that we (properly) anticipate to create exceptional versions of whatever it’s included in?

Sweet potato pancakes are much better than routine pancakes. Pleasant potato french fries? Likewise.

My favorite Peruvian treat– picarones — supports this concept. A picarĂ³n (accent mark on the single, not the plural) is a donut made with pleasant potato and squash. And, leaving accessories (frosting, polish, and so on) apart, a picarĂ³n is a lot more flavorful and tasty than a standard flour-based donut.

The cornerstones in picarones dough are camote (wonderful potato) and a South American squash called zapallo macre (Cucurbita optimums) There’s additionally flour (in a complementary, as opposed to main, role), sugar, and yeast. Cinnamon, anise seed, and cloves are thrown in for added flavor.

Some dishes include eggs. Yet usually, picarones are completely vegan.

The dough is offered time to ferment, which adds intricacy to the final product’s appearance and taste.
